Hey there, lovely readers! Welcome back to ‘Our Weekly Cadence,’ where we invite you to join us in the heart of our home. We have created a list of well-rounded dinner ideas for the next few weeks. Daylight savings time has arrived and our dinners are darker and cozier. Henceforth, we are adding in more fall produce to our diets and trying to balance healthy, nutritious meals with satisfying, cozy options. Meal Planning Tips – Batch Cooking Early in the Week
We have quite a bit of batch cooking to tackle these next few week. Cooking batch/bulk items helps us utilize what we have and gives us flexible easy options for things to add to our meals during the week. Here’s what we are up to making batches of the next few weeks:
- Pinto beans – making large batch of refried beans to have on hand for tostados, breakfast tacos, bean dip etc.
- Quick Pickles – we have some radishes we need to use and these are great for our tostado meals as well as school lunches
- Butternut squash – processing some for our pasta night, then saving some for our turkey chili, and freeze whatever we have left
- Homemade Yogurt – we use this in many of our baking items (like adding to pancake batter, coffee cake or brownies) as well as breakfasts and school lunches or snacks
- Chocolate granola – this will help us with some easy breakfasts (either adding milk or yogurt)
Baking & Treats
Like batch cooking, having baked goods on hands also helps give us excess items that can be used again in a separate meal or as a snack. These next few weeks we plan to bake the following:
- Multigrain Pan Loaf – from The Fresh-Milled Flour Bread Book
- Sourdough Discard Blueberry Muffins
- Sourdough Pumpkin Coffee Cake
- Chocolate Truffle Pretzel Pieces – this isn’t really baking per se, but we have an end of a pretzel bag with bits and pieces that we plan to dip in chocolate and coat in cocoa powder for a fun treat
