Ingredients

  • 1 1/2 oz Chamomile-infused gin if you don't have time to make the infused gin, try making chamomile syrup*
  • 3/4 oz Fresh lemon juice
  • 1/2 oz Agave syrup substitute maple or simple syrup
  • Champagne or brut sparkling wine to top
  • 1 Lemon twist for garnish
  • 1 Chamomile flower for garnish (dried or fresh)
  • 1 sprig Thyme sprig for garnish

Instructions

  • In a cocktail shaker filled with ice, combine the chamomile-infused gin, fresh lemon juice, and syrup. Shake well until chilled.
  • Strain the mixture into a chilled champagne flute or coupe glass.
  • Top off with chilled champagne or sparkling wine.
  • Garnish with a lemon twist, chamomile flower, and/or sprig of thyme.

Notes

*Chamomile Flavor: For more chamomile flavor, you can also prepare a chamomile simple syrup by steeping chamomile tea bags in hot simple syrup and letting it cool before using.
